Making Vinegar at Home. Pour the starting liquid into a glass or stoneware jar or bottle. There’s been about 1″ of liquid loss from evaporation; I didn’t know to add liquid to it till now. Proceed as before, and expect the vinegar to be ready in days to weeks. I like this 1-gallon glass jar from Amazon.com because it is smaller yet still has plenty of room for making vinegar batches (often the jars are multiple gallon sizes which is far more volume than is needed).
